Haddock Chowder

Haddock chowder is a hearty one pot meal. Flaked haddock fillets, potatoes, onion, garlic and bacon in a milk based broth. Delicious fish chowder ready in under an hour.
Ingredients -
 
6 tablespoons Butter
1 cup chopped Onion
6 cups diced raw Potato, peeled
1 teaspoon Black Pepper
1 teaspoon Garlic Powder
1/2 teaspoon Salt
2 pounds Skinless Haddock Fillets (little over 2 pounds)
2 cups Whole Milk
4 cans Evaporated Whole Milk
6 strips Bacon, cooked crisp and broken into pieces
 
Preparation:
 
1. Melt butter in a large saucepan.

2. Sauté onion until soft.

3. Add potatoes, pepper, garlic powder, and salt, plus enough water to cover the potatoes.

4. Bring mixture to a boil, and simmer 10 minutes.

5. Place haddock across cooked potatoes.

6. Cover pan. Boil 8 minutes over medium heat until fish flakes apart.

7. Add whole milk and evaporated milk, simmer a few minutes, but not return to a boil.

8. Serve in individual bowls. Sprinkle with bacon.

9. Season with salt and pepper.

Cooking Tip

Haddock
Cod or halibut both are a perfect replacement for haddock in this chowder. You could also experiment with other white fish fillets.

Garlic Powder
a teaspoon of crushed garlic or roasted garlic make a wonderful substitute for the garlic powder in this dish.
